This chicken tetrazzini is a comforting creamy low fat version of lusciousness! A cheesy pasta bake loaded with juicy chicken and plump mushrooms. When you bake this pasta casserole, some of the sauce bakes into the pasta, the flavors marry and something wonderful happens. You’ll know what I mean when you try it. Ridiculously good, easy to prepare, kid friendly, reheats well and freezer safe.  P.S. you can further simplify this by using rotisserie chicken – You’re welcome ‘ma friends in advance!

Salmon has earned its research reputation as a health-supportive food based largely on its unusual omega-3 fatty acid content. In our World’s Healthiest Foods rating system for food, only two foods provide more omega-3s per standard serving than salmon. Those two foods are walnuts and flaxseeds.  Combined with a stout beer which has a hearty molasses flavor that intensifies when the beer is reduced makes this a delish slimmer dinner. That sweetness is a perfect complement to rich salmon (use wild caught salmon vs. farm raised), especially when paired with the woodsy aroma of roasted mushrooms.
